Here you can find a Natural Mediterranean Menu for a whole day together with its recipes, developed by the Italian food therapist Silvia Bianco.

MENU DESCRIPTION (by Silvia Bianco)

Breakfast:
Gourmand smoothie of quinoa and strawberries (or other season fruit).

Dessert/Snack:
Apple dessert, raisins, kuzu and cinnamon for the sweet eager.

Lunch/Dinner:
First course: Effervescent quinoa to stimulate liver and calm down pancreas.
Side: Pressed carrot salad, sunflower seeds and raisins to dissolve accumulations in liver and gallbladder.
Second course: Relaxing azuki, spinach, and leek stew.

MENU RECIPES DETAIL
(Recipes are for 4 people)

Breakfast recipe:
Gourmand smoothie of quinoa and strawberries (or other season fruit).

Ingredients:

  • 1 cup quinoa (14 ounces, if one dose use 3 ounces)
  • 2 cups apple juice
  • 1 pinch whole marine salt
  • 1 fistful strawberries (or other season fruit)
  • 1 teaspoonful cinnamon
  • Bio lemon peel
  • Malt rice to taste or maple syrup

Procedure:
Wash quinoa and cover it with water in an amount of twice the volume of quinoa, add a pinch of whole marine salt, and cook up to water absorption at around 30 minutes. Keep it in a closed container in the fridge and use it for other desired preparations, sweet or salty.
Pull apart the desired part of quinoa (in the morning you need a full stomach), add the apple juice and a pinch of whole marine salt, and heat the resulting mix.
Add to that preparation the strawberries cut to pieces. Scrape the lemon peel over the preparation, then add the cinnamon.
Liquefy the preparation and, if possible, take it to work in a closed container or thermos.
Tip:
Breakfast is essential, it is the main meal and also the cornerstone for the day. Also the most plentiful. You can also prepare the recipe and store it in a container for some days and quickly reheat it in the morning.

Dessert/ Snack recipe:
Apple dessert, raisins and cinnamon for the sweet eager.

Ingredients:

  • 2 teaspoonfuls Malt rice, as an option (if it turns too sweet reduce quantities) Maple syrup
  • 3 spoonfuls of washed raisins
  • 2 apples
  • 1 pinch whole marine salt
  • 2 spoonfuls apple juice
  • 1 teaspoonful cinnamon

Procedure:
Wash and soak the raisins. Wash the apples and cut them in pieces.
Put the following ingredients in a pan: apple juice, apples cut to pieces, cook for 10 minutes and then add the raisins and cinnamon. Cover it and cook for other 10 minutes.
Tip:
Excellent for breakfast (having cereal already cooked the night before) or for sweet eager, or as relaxing after dinner.

Lunch/ Dinner recipe:

First course:
Effervescent quinoa to stimulate liver and calm down pancreas.

Ingredients:

  • 1 cup quinoa (14 ounces)
  • 2 cups water
  • 1 white onion
  • 2 carrots
  • 1 corsage of green leaves such as spinach
  • 1 Plenty fistful pistachio
  • 1 Plenty fistful buds
  • Olive oil
  • Whole marine salt
  • Parsley to decorate

Procedure:
Roast pistachios on a nonstick skillet.
Wash quinoa, add twice its volume of water and a pinch of whole marine salt, cook covered for 25 minutes. Keep the preparation in a glass airtight container for other sweet or salty preparations. You can also use it for the smoothie.
Wash and cut the vegetables. In a pan put the cut vegetables, add oil, half a glass of water, a pinch of whole marine salt, cover and cook for 10 minutes, then add the quinoa and saute it with oil and salt.
Serve sprinkling with parsley pistachios and buds.

Side:
Pressed carrot salad, sunflower seeds and raisins to dissolve accumulations in liver and gallbladder.

Ingredients:

  • 4 big carrots
  • 1 spoonful apple vinager
  • Whole marine salt
  • 1 fistful raisins
  • Lemon juice quantity as needed
  • 1 spoonful apple juice

Procedure:
Soak the raisins and drain them properly.
Wash and cut the vegetables in strips (or you can scrape them to do it faster), mix them in a big bowl with the apple vinegar, the lemon juice and the apple juice. Add the raisins.
Put them on a dish, cover with a cloth, and put some weight over it so it drains. Leave it draining for 30 minutes.
Tip:
prepare a larger quantity for some other days when there is sweet eager, or to relax the pancreas and spleen. This recipe is useful to speed up metabolism and help slim down.

Second course:
Relaxing azuki, spinach, and leek stew.

Ingredients:

  • 1 cup azuki (14 ounces, 3 ounces per person) or red beans (already cooked)
  • 3 leeks
  • 1 rosemary corsage
  • some sage leaves
  • 2 cabbage leaves
  • 2 zucchini
  • 1 bit of kombu algae or a laurel leave
  • Whole marine salt
  • Olive oil
  • 1 spoonful tamari (bio soy sauce)
  • 1 garlic clove
  • some parsley to decorate

Procedure:
Soak the azuki (or red beans) the night before, or buy them canned already cooked.
The following day cook the azuki (or read beans) covered in a pan with approximately 2 litres of water. Add a bit of kombu algae and cook for 1 hour and a half on low heat. Wash and cut the vegetables. In a pan put oil, rosemary, sage in bits, the leeks, the other vegetables, the salt, add half a glass of water, then leave it boiling covered for 10 minutes. After that, add the azuki and the soy sauce. Boil for other 10 minutes so it mixes properly.
Serve sprinkled with parsley.
